I watched this recipe on Jaya Tv 'Rasika Rusika' program and gave it a try. It turned out very well. Like the name, this Kara Vadai is spicy in a very nice way.
Ingredients:
1/4 cup - Pacha Arisi/Raw Rice
1/4 cup - Ulutham Paruppu/Urad Dhal
1/4 cup - Thuvaram Paruppu/Thoor Dhal
1 Tablespoon - Kadalai Paruppu/Channa Dhal
6 - 8 round red chillies
1/4 inch chopped Inji/Ginger
1 chopped Pacha Milagai/Green Chillies
1 - 2 Tablespoon cut coconut pieces
1 sprig Karuveppalai/Curry leaves
1/4 Teaspoon Perungayam/Asafoetida powder
Uppu/Salt
Kadala Ennai/Peanut oil to fry the vadais
Preparations:
You need to soak the raw rice and channa dhal separately. Soak the Urad dhal, Thoor dhal & Red chillies together. It can be soaked for between 1 - 3 hours.
How to Cook:
1) In a mixer Jar, First grind the soaked raw rice to smooth consistency. Take out in a bowl
2) Add the red chillies and grind them. Add the Urad Dhal & Thoor Dhal and grind it coarsely.
3) Add the soaked Channa Dhal, Ginger, green chillies, coconut pieces, curry leaves, Asafoetida powder, and salt. Mix everything.
4) Heat Peanut oil and when the oil is hot, Make rounds of the batter and fry it until golden brown.
Few Tips:
1) This Vadai will look like a bonda, you don't need to make it in Vadai shape.
2) Make medium size rounds of the batter, this Vadai needs to be a little big. It shouldn't be in bite-size.
